ORIENTAL CHICKEN SESAME SALAD 
1 c. cooked chicken (cut in thin julienne strips)
1 tbsp. soy sauce
3 tbsp. olive oil
1/2 clove crushed garlic
1/2 tsp. grated lemon rind
1 1/2 c. spinach leaves, cut in strips
1 1/2 c. Chinese cabbage, cut diagonally
1 tbsp. lemon juice
1/4 tsp. salt
1 tbsp. toasted sesame seeds

Marinate chicken several hours in 1/2 tablespoon of soy sauce, 1 1/2 tablespoons olive oil and half the lemon rind. Just before serving, toss spinach and cabbage with remaining oil, lemon rind, lemon juice, soy sauce and salt. Add chicken mixture and sesame seed and mix thoroughly.
