BROCCOLI SOUFFLE 
Saltine crackers
3 onions, chopped (1/2 c.)
3 tbsp. flour
1/2 c. water
5 eggs
2 boxes chopped broccoli, cooked slightly & drained
Butter
1 sm. Cheez Whiz
Salt & pepper

Saute onions in butter. Add flour, salt, pepper and 1/2 cup water; mix until thick. Add Cheez Whiz mix until blended. Pour over broccoli. Beat eggs separately and then mix with broccoli mixture. Pour into greased pan. Crush saltines and sprinkle over top. Dot with butter. Bake until golden and toothpick comes out clear.
