BROILED FLANK STEAK 
1 (1 1/2 to 2 lb.) flank steak
2 sm. onions, thinly sliced
1 tsp. orange rind, grated
1/2 c. fresh orange juice
2 tbsp. sugar
1/2 tsp. salt, (optional)
1/2 tsp. oregano leaves, crushed
1/8 tsp. pepper
2 tbsp. soy sauce
1 tbsp. butter

Sear steak 1/8 inch deep on both sides in diamond design. Layer half the onion in large shallow glass dish; place steak over onion and top with remaining onion. Thoroughly combine remaining ingredients except butter; pour over steak and onion. Cover and refrigerate overnight, turning several times. Remove steak from marinade; blot with paper towels. Preheat broiler; broil meat 3 to 5 inches from heat. Cook 5 minutes on each side or to desired doneness. While broiling meat, cook drained onions in butter until tender. To serve, hold knife almost horizontal to meat and cut into thin diagonal slices; top with onions. Yields 4 servings.
