BROILED SAVORY FLANK STEAK | |
1 top quality flank steak (1 1/2 lb.) 1/4 c. soy sauce 1/4 c. sweet cream sherry 1 lg. clove garlic, crushed Remove any membrane or excess fat from outside of steak. With kitchen scissors, snip the short ends of steak at 1 inch intervals to keep meat from curling. In shallow container, stir together soy sauce, sherry and garlic. Place steak in marinade, spooning some over top. Marinate for several hours or overnight, turning once midway. Saving marinade, broil steak on rack rather close to high heat for 3-5 minutes on each side. Slice very thin across the grain holding knife almost flat to make wide strips. If you like you may strain the small amount of marinade and heat it to serve as a dip for the meat. |
