MINESTRONE SOUP 
1 med. chopped onion
1 clove garlic, crushed
2 tbsp. chopped parsley
1/2 tsp. thyme
1/2 tsp. oregano
3 tbsp. tomato paste
28 oz. can tomatoes, chopped
3 diced carrots
2 c. chopped cabbage
2 diced zucchini
1/3 c. uncooked brown rice
2 cans Lima beans, drained
1 1/2 qts. liquid (chicken broth or water)

Put all ingredients except rice and beans in large pot, bring to boil. Add rice, simmer for 1 hour, covered. Then add beans. Cook soup. Puree 1/2 of lukewarm soup in blender. Return to pot, stir well, heat and serve. If water is used as liquid, can sprinkle Parmesan cheese on top when serving. Delicious.
