FRESH FRUIT SALAD 
3 env. Knox unflavored gelatin
2/3 c. sugar or 18 packets of low cal substitute
2 c. boiling water
1 c. cold water
1/2 c. lemon juice
4 c. various in-season fresh fruit, sliced (use at least 3 different fruits)

In medium mixing bowl, mix unflavored gelatin with boiling water. Stir until completely dissolved. Add sweetener, stir until dissolved. Add cold water and lemon juice. Chill until consistency of unbeaten egg whites. Fold in fruit. Pour into a 6 cup mold and chill until firm. Unmold to serve. If desired, garnish with whipped cream or substitute, mayonnaise or yogurt. 8 servings.
