FRESH APPLE CAKE 
1 1/2 c. salad oil
2 c. sugar
2 eggs
3 c. fresh apples, chopped
1 c. nuts
1 c. raisins or candied fruit, if desired
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla
1 tsp. cinnamon

Mix salad oil, sugar and eggs and beat. Add remaining ingredients. Bake in a tube pan in a slow oven (325 to 350 degrees until done, about 1 1/2 hours.) Cool about 15 minutes before removing from pan. Delicious served hot with ice cream or your favorite topping.
