CRACKLING BISCUITS 
2 med. cooked potatoes, mashed
1 cake yeast
3/4 c. warm milk
3 c. flour
1 tbsp. salt
2 tbsp. sugar
1 lb. ground cracklings

Mix yeast and warm milk until yeast dissolves. Mix all ingredients, except cracklings - let rise about 1 hour - roll out dough on lightly floured board and spread with the cracklings. fold over 4 ways - let rise again - continue this rolling, folding and raisins 2 more times. Total raising time 3 to 4 hours. Roll out to 1/2 inch thickness - cut with biscuits butter - place on cookie sheet. Brush tops with beaten egg. Bake at 375 degrees for 25 or 30 minutes.
