CRACKLING BISCUITS 
2 cooked potatoes
1 yeast
1/2 c. warm milk
3 c. flour, unsifted
1 tbsp. salt
2 tbsp. sugar
1 lb. ground cracklings

Sift dry ingredients into a bowl. Mash potatoes and work into flour between palms of hand. Dissolve yeast in the milk. Add to flour mixture and blend well. Let rise until double. Place on floured board roll 1/2 inch thick into a large square with the cracklings. Fold over envelope fashion. Let rest for 30 minutes. Repeat 3 times. Now roll out 1/2 inch thick and cut with biscuit cutter.

Place on ungreased cookie sheet. Make criss-cross with a fork on each biscuit. Brush tops with beaten egg. Bake at 350 degrees for 20-30 minutes.
