ITALIAN MACARONI AND CHEESE 
4 tbsp. oil
1/2 c. onion, chopped
1 clove garlic, minced
1/4 c. celery, chopped
2 (6 oz.) tomato paste
2 c. water
1 1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. basil or oregano
1/8 tsp. pepper
2/3 c. Parmesan cheese
1/2 lb. lg. macaroni, cooked and drained
1 lb. Ricotta or cottage cheese

1. Cook onion, garlic and celery in oil until soft. Blend in paste, water and seasonings. Bring to boil, cover and simmer 5 minutes.

2. In 9 inch square baking dish, put thin layer of sauce. Sprinkle with cheese and top with 1/2 macaroni. Spread Ricotta or cottage cheese on macaroni. Cover with 1/2 sauce, sprinkle with more Parmesan cheese. Cover with remaining macaroni, sauce and cheese. Bake 350 degrees 35-40 minutes until top is brown and sauce bubbles.
