CHICKEN AND RICE DELUXE 
2 tbsp. butter
2 tbsp. chopped green pepper
2 tbsp. chopped onion
2 c. cooked chicken, cut into bite-sized pieces
1 (6 oz.) pkg. wild rice or long grain & wild rice, cooked
1/2 c. mayonnaise
1 (6 oz.) can French style green beans, drained
1 (10 3/4 oz.) can cream of celery soup
1/2 c. sliced water chestnuts
1/4 tsp. salt
Pepper to taste
Juice of 1 lemon
1 c. grated Cheddar cheese

Saute green pepper and onion in 2 tablespoons butter. Combine all ingredients and place in a greased 2 quart casserole dish. Bake at 350 degrees, uncovered, for 25-30 minutes. Top with grated cheese and cook 5 more minutes or until cheese is melted.
