CREAM FILLING FOR PIE 
2/3 c. sugar
1/3 c. flour
1/8 tsp. salt
3 egg yolks
Flavoring
2 c. scalded milk

If a stiffer filling is wanted increase flour to 1/2 cup. Sift dry ingredients, place in double boiler. Very gradually add and stir in milk. Allow to cook about 15 minutes then add 3 egg yolks and cook 3 minutes longer, stirring constantly. Follow instructions so filling will not get lumpy. For chocolate pie - melt 2-3 squares of chocolate and increase sugar to 1 cup. Add melted chocolate last. Use baked pie shell.

COCONUT CREAM FILLING:

Make cream filling an allow to cool slightly; add 1/2 cup shredded coconut to filling. Place in baked pie shell and cover with meringue and sprinkle with additional coconut. Brown at 300 degrees for about 15 minutes.
