PEGGY'S MEAT BALLS | |
4 lbs. ground beef 4 eggs 3 tbsp. grated onion 2 c. milk 2 c. bread crumbs 6 tsp. salt (or 4 tsp.) 1 tsp. pepper (or less) 1 tbsp. sugar 1/2 tsp. allspice SAUCE: 1 can tomato soup, undiluted 3/4 c. brown sugar Beat eggs slightly. Make crumbs by putting slices of bread in blender. Mix all and make into 48 (2 inch) balls. Put in 2 (9x13) baking dishes, greased. Bake at 400 degrees for 20 minutes. Remove excess fat if any. Mix soup and brown sugar. Pour over cooked balls. Bake at 325 degrees for 1 to 1 1/2 hours. Watch them. The sauce is so good I double it for 4 pounds. Freezes well. (Easier to form balls if chilled). |
