PEPPER JELLY 
3/4 c. finely chopped bell peppers
1/4 c. green or red chilipitins
6 1/2 c. sugar
1 1/2 c. cider vinegar
1/2 bottle Certo
Few drops red or green food color

Place peppers and 1/2 cup of the vinegar in a blender. Blend until peppers are pureed. Strain pepper mixture through fine cheesecloth and pour into a large saucepan. Add remaining vinegar, sugar and a few drops of food color. (Use green peppers and green food color for green jelly or red peppers and red food color for red jelly).

Stir constantly until mixture reaches a full rolling boil that can't be stirred down. Remove from heat and cool for 5 minutes. Skim off foam and add Certo. Pour into glasses.
