GREEN PEPPER JELLY 
2 c. coarsely chopped green peppers
1 c. fresh jalapeno peppers, seeded & chopped
5 1/2 c. sugar
1 1/2 c. cider vinegar
1 (6 oz.) pkg. liquid fruit pectin
Green food coloring (opt.)

In blender container blend pepper until nearly smooth. Pour into non-aluminum kettle. Stir in sugar and vinegar. Bring to boil, stirring constantly. Cook and stir 5 minutes. Stir in food coloring. Add pectin; boil hard for 1 minute. Skim off foam. Ladle at once into hot, clean 1/2 pint jars, leaving a 1/2" head space. Wipe rims, adjust lids. Process in boiling water bath for 15 minutes. Makes 5 to 6 one-half pints.
