Fresh beef brisket, 4-5 lbs. (to serve 6)
Put in roaster, season well with garlic powder, Lawry's season salt, pepper, scant of paprika. Spoon over 3 tablespoons vinegar.
Put in oven uncovered at 350 degrees for 1 hour. Slice onion rings on top and pour 1 1/2 cups boiling water over brisket.
Put lid on and roast at 300 degrees about 4 hours. Keep checking water to make sure it doesn't dry out. Add if needed. After roasting is done, let cool to room temperature and refrigerate until next day so it marinates well and 1 hour before serving heat at 200 degrees with lid on and slice. Served with rice casserole.
