CHUTNEY-MELON CHICKEN SALAD 
1/4 c. low-fat plain yogurt
1/4 c. chutney
2 c. cubed, cooked chicken
2 c. cubed honeydew melon
2 tbsp. shredded coconut
2 tbsp. dry roasted unsalted peanuts
2 tbsp. golden raisins
Lettuce leaves

Combine yogurt and chutney in medium-size bowl. Stir in chicken, melon, coconut, peanuts and raisins. Serve over lettuce. Makes 4 portions.
