SUMMER SQUASH WITH GREEN CHILI 
4 tbsp. butter
4 med.-sized summer squash, diced
1/4 c. milk
1/2 c. chopped green chili
1/2 sm. onion, chopped
Salt and pepper to taste
1/2 c. grated Cheddar cheese

Melt butter and add diced squash and onion. Saute until tender. Add milk, green chili, salt and pepper. Cook 15 minutes or until tender. Remove from heat and add grated cheese on to p.
