BUD'S PINEAPPLE COOKIES 
1/2 c. sugar
1 1/2 tbsp. cornstarch
1 1/2 c. crushed pineapple
1 1/2 tsp. lemon juice
1 c. sifted flour
1 tsp. salt
2 1/2 c. quick cooking oatmeal
1 c. brown sugar
1 c. shortening

Combine and cook sugar, cornstarch and crushed pineapple, slowly, until thick and clear Add lemon juice and cool.

Mix together flour, salt, oats and brown sugar. Cut in shortening making a crumbly mass. Pat 1/2 in greased 8x12 pan. Pat down to fit pan.

Spread with cooled pineapple mixture. Sprinkle remaining crumbs over top, tapping smooth. After baking, cool in pan and cut.
