1 c. shortening 2 c. brown sugar 3 eggs, beaten 3 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. vanilla Cream shortening and sugar. Beat in eggs. Mix flour with soda and salt. Add to creamed mixture. Drop dough in small mounds about 2 inches apart. Press small amount (about 1 teaspoon) of cold filling in center. Top with small amount of dough. Bake at 350 degrees for 10-15 minutes. FILLING: 1 1/2 c. raisins 1/2 c. sugar 1 tbsp. cornstarch 1/2 c. water 1 tbsp. lemon juice 1 tbsp. soft butter 1/4 c. chopped nuts Place raisins in saucepan. Add sugar, cornstarch, water. Cook until thick. Cool slightly. Add lemon juice, butter, nuts. Let stand until cold. |
