PEEK-A-BOO COOKIES 
1 c. shortening
2 c. brown sugar
3 eggs, beaten
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla

Cream shortening and sugar. Beat in eggs. Mix flour with soda and salt. Add to creamed mixture. Drop dough in small mounds about 2 inches apart. Press small amount (about 1 teaspoon) of cold filling in center. Top with small amount of dough. Bake at 350 degrees for 10-15 minutes.

FILLING:

1 1/2 c. raisins
1/2 c. sugar
1 tbsp. cornstarch
1/2 c. water
1 tbsp. lemon juice
1 tbsp. soft butter
1/4 c. chopped nuts

Place raisins in saucepan. Add sugar, cornstarch, water. Cook until thick. Cool slightly. Add lemon juice, butter, nuts. Let stand until cold.

My Mom's recipe called for hazel nuts, and candied cherries.... couldn't find that recipe so I tried the switch and doubled the recipe... total disaster. Will look harder for my Mom's recipe.
