SCRIPTURE COOKIES | |
1 c. flour 2 tbsp. cornstarch 1/2 c. sugar 1/2 tsp. salt 1/2 c. salad oil 4 egg whites 1 tbsp. water 2 tsp. vanilla 1/2 tsp. lemon extract Type scriptures on 1/2 x 3-inch paper for each cookie. Have ready a straight- sided bowl to bend the cooked cookies over to shape them. Put them in a muffin pan so they will hold their shape while they are cooling. Stir together flour, cornstarch, sugar and salt. Add oil and egg whites; beat until smooth. Beat in water and flavorings. Drop batter by level tablespoons on a well-greased baking sheet and spread out evenly with the back of a spoon into 4-inch circles. Bake until light golden brown. With a wide spatula, remove one cookie at a time. Put scripture paper on cookie. Quickly fold cookie in half, then bend cookie backwards over bowl to shape it. Place bent cookie in muffin pan to retain its shape. |
