FILLED COOKIES 
1 c. sugar
3/4 c. shortening
1 egg
1/4 c. milk plus 1 tsp. vanilla in milk

Cream together above ingredients. Add 1 1/2 cups flour sifted with 1/2 teaspoon salt and 1/2 teaspoon baking soda. Beat until smooth. Add 1 1/2 cups quick oatmeal. Chill. When cool, put together with filling.

DATE FILLING:

1 c. chopped dates
1 c. water
1 c. sugar (or less)
Juice of lemon
Dash of salt

Cook together until smooth, stirring constantly.

RAISIN FILLING:

2 1/2 c. raisins
1/2 c. sugar
2 tbsp. cornstarch
3/4 c. water
3 tbsp. lemon juice

Grind raisins (pour boiling water over them before grinding, not so sticky). Cook together all ingredients until smooth. Cool.
