SEAFOOD AU GRATIN 
5 tbsp. butter
3 tbsp. flour
1/2 pt. heavy cream
1 1/2 c. milk
3 slices Swiss cheese, cubed
1 lb. cleaned shrimp
1/2 lb. scallops
1/2 lb. crab meat
1/4 c. Parmesan cheese, grated
3/4 c. buttered bread crumbs
Salt and pepper to taste

Melt 4 tablespoons butter in sauce pan. Add flour and stir constantly until blended. Add cream and milk and continue to stir until mixture thickens. Add Swiss cheese. In large casserole dish saute shrimp, scallops and crab meat in 1 tablespoon butter. Season with salt and pepper. Saute for 3 minutes. Add sauce. Sprinkle with buttered bread crumbs and Parmesan cheese. Bake uncovered for 15 minutes or until lightly browned.
