6 tbsp. bacon grease 6 tbsp. flour 1 green pepper, chopped 2 lbs. okra, chopped finely 2 lg. onions, chopped 3 celery stalks, chopped Make roux from grease and flour; cook for 45 minutes and stir occasionally until dark. It does separate. Add rest of ingredients to roux. Stir constantly for 20 minutes. Take off heat. Add 1/2 can of small tomato paste. In large soup pot, place 9-12 cups chicken broth. Add all above ingredients and simmer for 1 hour. You can refrigerate at his point and add seafood next day. 2 lbs. shrimp, shelled, deveined, not cooked 2 bay leaves Salt and pepper 1/2 to 1 tsp. crab boil 1/2 c. chopped parsley Tabasco Worcestershire Simmer for 30 minutes more. Add 1 tablespoon bitters before serving. Serve with boiled rice. 10 servings. |
