BARBARA POOL'S CHEESE GRITS 
1 c. dry grits
4 c. water
Pinch of salt
1 well-beaten egg (optional)
1 stick butter
Approximately 3 inch chunk of Velveeta cheese (2 lb. pkg.)
1 sm. can mild green chilies
Garlic salt to taste

Cook until grits are thick according to package directions. While grits are hot, add 1 stick of butter and Velveeta cheese, cut into small cubes. Add 1 small can of chopped mild green chilies and garlic salt to taste. One well-beaten egg may be added to thicken, if desired. Cook in greased casserole at 350 degrees for 25 to 30 minutes.
