CHICKEN ZESTA 
1 stick butter
1/2 c. chopped onion
1/4 c. chopped bell pepper
1/4 c. chopped celery
3 c. chopped chicken, cooked
1 sm. can cut mushrooms
1 sm. jar diced pimento
2 c. cooked rice
1 lg. can evaporated milk
1 can cream of mushroom soup
1/2 block grated cheese

Saute vegetables in butter. Add all other ingredients except cheese. Pour into 2 quart casserole dish. Bake at 350 degrees for 45 minutes. Cover with cheese, then brown.
