MEXICAN FIESTA PIE 
3 c. corn or tortilla chips
15 oz. can chili with beans
1/2 c. chopped onion
2 c. (8 oz.) shredded cheddar, American, or Monterey Jack cheese
Shredded or chopped lettuce, tomatoes & olives

Heat oven to 400 degrees. Lightly grease a 9 inch square pan or a 1 1/2 quart shallow casserole. Layer half the corn chips, chili, onion and cheese into pan; repeat. Bake uncovered at 400 degrees for 15 minutes or until hot. Garnish with lettuce, tomatoes and olives.
