JOE'S ENCHILADA PIE 
2 lbs. ground beef
2 lg. cloves garlic, crushed
2 lg. onions, chopped
Salt
Pepper
Cumin
1 lg. can Las Palmas chili sauce
2 sm. cans tomato sauce
1 pt. sour cream
1 1/2 - 2 lbs. grated Cheddar cheese
2 doz. corn tortillas, cut in 1 inch sq.
3 cans sliced olives

This recipe will fill 2 (13x9) pyrex dishes. Oven should be preheated at 350 degrees.

Brown meat with onions, garlic and spices. Add chili sauce and tomato sauce and simmer 1/2 hour. Add olives and stir. Turn off heat and add sour cream. Stir.

First put a layer of sauce in bottom of dish; add a layer of cut up tortillas; then sauce; cheese; and another layer of tortillas. Sauce, cheese, tortillas, sauce and cheese on top. Bake at 350 for 45 minutes or until cheese bubbles and browns. Excellent made ahead of time and reheated in microwave. 15 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
