CHICKEN AND SAUSAGE CASSEROLE 
4 c. canned tomatoes, preferably Italian plum, peeled
1 tsp. sugar
6 chicken breast halves
1 tbsp. olive oil
6 sweet or hot Italian sausages (about 1 lb.)
1 c. chopped onions
1 c. sliced mushrooms
1 lg. green pepper, cut into 1-inch cubes
1 clove garlic, minced
1 tsp. oregano
1/2 c. chicken broth
1/2 c. dry white wine

Place tomatoes in saucepan and cook down until reduced to 2 cups. Stir in sugar. Brown chicken pieces in oil; sprinkle with salt and pepper. Prick sausages with fork and add; brown all meat for 15 minutes and pour off fat. Add onions, mushrooms, green pepper, garlic, oregano, tomatoes, broth and wine. Cook, covered, 40 minutes. Serve with rice. Yield: 6 servings.
