MANHATTAN COD CHOWDER 
4 slices bacon, cut 1 inch pieces
4 sm. onions, peeled, quartered and sliced
1 c. thinly sliced celery
2 lg. potatoes, pared and cubed (2 c.)
1 clove garlic, minced
1 tsp. dried thyme, crushed
1 tsp. salt
1 (8 oz.) bottle clam juice
1 c. water
1 (16 oz.) pkg. frozen cod, thawed and cut 3/4 inch
1 c. (28 oz.) tomatoes

Saute bacon until crisp, drain. Stir onions and celery into drippings; saute until soft. Stir in potatoes, garlic, thyme, salt, clam juice and water. Heat to boiling. Cover. Simmer 10 minutes. Add cod cubes, cover. Simmer 5 minutes. Stir in tomatoes and heat slowly. Simmer 5 minutes. Top with crisp bacon.
