BOB'S BROCCOLI & CHEESE
CASSEROLE
 
1/4 c. onion
1/4 c. celery
1/2 c. butter
1 c. rice (maybe a little more)
1 box frozen broccoli
1 can cream of mushroom soup
1 sm. can evaporated milk
1/2 of 16 oz. jar Cheez Whiz

Saute the onion and celery in the butter over low heat. In a casserole or crock pot put: rice, broccoli, soup, evaporated milk and Cheez Whiz. Mix well. Add the onion and celery; stir. Bake 40 minutes at 350 degrees or several hours in crock pot.

I've been making this for 35 yrs, only differences are as follows: get the chopped frozen brococoli, cream of celery soup rather than mushroom, only a qtr cup of any milk, AND I add a can of sliced water chestnuts for texture. I use only half the chez whiz IN the casserole and drizzle the rest on top. The cheese needs to be melted first. As my 32 yr old daughter says when I take it out of the oven, "please mom, just pour it down my pants"! Trust me, this recipe is a keeper.
