BROCCOLI CHEESE SOUP 
1/2 med. yellow onion, chopped
3 c. milk
1/3 c. sliced mushrooms
2 tbsp. butter
1 bag frozen chopped broccoli
1 1/2 lbs. Velveeta cheese

Saute onion and mushrooms in butter in a large pot. Reduce heat to medium and add milk and frozen broccoli. Add cheese, cut in cubes. Cook on medium heat, stirring occasionally for about 20 minutes or until cheese is melted. Great for crock pot lunches!
