MEXICAN CHICKEN 
1 med. chicken (6 or 8 breasts)
1/2 lb. Velveeta
1 can Rotel
1 can cream of chicken soup
1 can cream of mushroom soup
1 c. broth
2 pkgs. Dorito chips
1 med. onion
1 med. green pepper

Boil chicken until tender. Remove from bones and place in a 9 x 13 inch pan. Dice onion and green pepper and place on top of chicken. Put 1/2 Doritos on top of this. Mix 2 cans of soup, broth and Ro-tel. Pour over mixture. Add chopped cheese and top with remaining Doritos. Bake 30 minutes at 350 degrees.
