ONION SAUSAGE CASSEROLE 
3 lg. onions, sliced thin, about 2 lbs.
3/4 c. round buttery cracker crumbs
1 lb. pork sausage (cooked & drained)
1 (10 3/4 oz.) can cream of mushroom soup, undiluted
1 (2 oz.) jar diced pimientos, drained
1/4 tsp. salt (opt.)
1/2 c. (2 oz.) shredded cheddar cheese

Arrange onions in a lightly greased 12"x8"x2" baking dish. Sprinkle with cracker crumbs. Combine remaining ingredients except cheese; spoon over onions. Cover and bake at 400 degrees for 30 minutes. Uncover and sprinkle with cheese. Bake an additional 5 minutes. Makes 6 servings.
