STRATHMORE QUICHE 
Spinach
1 cup grated Swiss Cheese
5 to 6 mushrooms
1/2 onion
olive oil
3 eggs
1-1/2 cups milk
salt (1/2 tsp.) and pepper, to taste

Preheat oven on 425°F.

1) Spray circular pan with PAM.

2) Add layer of chopped spinach to bottom of pan.

3) Add layer of Swiss cheese (about 1/4 cup grated).

4) Sauté 5 or 6 mushrooms and onion (both chopped) with olive oil and then add them to the quiche pan on top of the spinach and cheese.

5) In separate bowl mix the milk and eggs together with a whisk and then add the remaining cheese to that bowl. Also add salt and pepper for taste. Then pour the whole mixture into the quiche pan.

6) Finally, Put in oven for about 35 minutes. May vary depending on the pan depth. When you put the pan in the oven turn the oven temp. down to 350°F.

Being Scottish, I'm wondering why this is called "Strathmore" quiche? :-) Swiss cheese--not Scottish cheddar?
