LEMON SESAME CHICKEN 
3 chicken breasts, deboned, skinned & split in half, all excess fat removed
1/3 c. flour
1/4 c. sesame seeds
1/4 c. finely chopped green onion
Juice of 1/2 fresh lemon
2 tbsp. butter
2 tbsp. polyunsaturated oil
Pepper to taste
Dry white wine

Melt butter and oil in a baking dish large enough to hold breasts. Coat chicken with a mixture of flour and a pinch or 2 of pepper. Roll breasts in oil in baking pan and then arrange in bottom. Sprinkle with lemon juice and sesame seeds (use only 1/2 at this time).

Bake breasts at 350 degrees for approximately 35 to 45 minutes or until lightly browned. Turn chicken once and sprinkle with remaining lemon juice, sesame seeds and top with green onions. Pour wine into bottom of pan (not over chicken) and use as a baste. Return to oven for approximately 45 minutes. Serves 4 to 6 persons.
