CHICKEN DELIGHT 
Flour seasoned with salt & pepper
1 (2-3 lb.) chicken, cut up
2 tbsp. butter
2 tbsp. oil
1 can mandarin oranges
4 tbsp. lemon juice
1/2 c. orange juice (from canned mangos)
2 tbsp. honey
2 tbsp. soy sauce
1/2 tsp. ginger

Dredge chicken in flour, brown in butter and oil. Drain oranges. Reserve juice and mix with lemon juice, honey, soy sauce and ginger. Pour over chicken in skillet, cover and simmer for 30 minutes. Add oranges. Cover and simmer for 5 minutes. 4 to 6 servings.
