SNOWY EMERALD SALAD 
1 env. unflavored gelatin
3/4 c. water
3/4 c. mayonnaise or salad dressing
1/2 c. sour cream
2 (3 oz.) pkgs. lime-flavored gelatin
2 c. boiling water
1 1/2 c. cold water
3/4 c. diced, unpeeled cucumber
3/4 c. sliced cauliflower flowerets
1/2 c. sliced radishes
Leaf lettuce (optional)
Radish roses (optional)

Combine gelatin and 3/4 cup water in a heavy saucepan; let stand 1 minute. Cook and stir over medium heat until gelatin dissolves, about 1 minute; remove from heat. Combine mayonnaise and sour cream; stir well. Add gelatin mixture to mayonnaise mixture, stir well. Pour into a lightly oiled 8-cup mold. Chill until firm.

Combine lime gelatin and boiling water, stirring until gelatin dissolves. Stir in cold water; chill until mixture is the consistency of unbeaten egg white. Add cucumber, cauliflower and radishes; stir well. Pour vegetable mixture over chilled layer in mold. Chill until firm. Unmold onto lettuce leaves and garnish with radish roses, if desired.
