EGGPLANT PARMESAN | |
1 lg. eggplant Salt 1/4 c. flour 2 eggs 1 c. bread crumbs 1 1/2 c. Mozzarella cheese 1/2 c. Parmesan cheese 1 1/2 c. tomato sauce Salt eggplant for 1 hour. Wipe salt off with paper towel. Dip into flour and then into egg. Roll into crumbs and fry. Brown on both sides. In a baking dish, place a layer of fried eggplant. Pour tomato sauce over it. 3/4 cup Mozzarella cheese goes next, followed by 1/4 cup Parmesan cheese. Repeat a second time. Bake for 1/2 hour at 350 degrees. |
