PAPRIKA CELERY 
1 med. onion, sliced or diced
2 tbsp. vegetable oil
3 c. diced celery, cooked 20-30 minutes
1 tbsp. paprika
Dash of salt and pepper
Parsley flakes
1/3 c. dairy sour cream

Saute onion in oil a few minutes, then combine with celery. Stir in paprika, salt, pepper, and parsley. Heat gently, stirring a few minutes. Stir in sour cream and heat gently. (DO NOT OVERHEAT). Makes 4 servings.
