PEACH BETTY 
2 c. diced fresh peaches or canned peaches, drained
1/2 tsp. vanilla
1/2 tsp. cinnamon
1/3 c. chopped nuts
1/4 tsp. nutmeg
1 c. firmly packed brown sugar
1 c. sifted all-purpose flour
1/2 c. butter

Combine peaches, vanilla and spices; place in a 1-quart buttered gratin dish. Combine dry ingredients; cut in butter. Sprinkle over peaches, top with nuts. Bake at 350 degrees for 40 minutes.
