SALMON LOAF | |
2 (16 oz.) cans salmon 2 eggs 1 1/2 c. milk and salmon juice combined 3 c. coarse cracker crumbs 2 tbsp. lemon juice 2 tsp. chopped onion 1/4 tsp. salt 1/4 tsp. pepper Flake, and remove bones and skin from salmon. Blend in 2 eggs, stir in liquid from salmon plus milk to make 1 1/2 cups, 3 cups cracker crumbs, lemon juice, onion and salt and pepper. Spoon lightly into 9x5x3 inch loaf pan. Bake 45 minutes in 350 degree oven. Serves 8. |
