ZUCCHINI PIE 
1 deep dish pie crust
4 c. thinly sliced zucchini
1 c. chopped onion
1/4 to 1/2 c. butter
1/2 c. chopped parsley or 2 tsp. parsley flakes
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. basil
1/4 tsp. oregano
2 beaten eggs
8 oz. shredded Mozzarella cheese

Saute zucchini and onion in butter. Stir in next 6 ingredients until tender. Combine 2 eggs and cheese. Add zucchini mixture. Pour into unbaked pie crust. Sprinkle lightly with paprika. Bake at 375 degrees for 35 to 40 minutes.
