ZUCCHINI PIE 
1/4 lb. butter
4 c. zucchini (thinly sliced)
1 c. onion (chopped)
2 tbsp. mustard
1 1/2 c. Mozzarella (or Swiss) cheese
2 eggs
Oregano, parsley and basil
Unbaked pie shell (pkg. of crescent rolls may be used) "triangles"

Combine butter, zucchini and onion in skillet; cook 15 minutes or until tender. Add cheese and eggs.

Spread 2 tablespoons mustard on pie shell (or crescent roll triangles). Fill. Sprinkle on spices as desired. Bake 15 minutes at 350 degrees until crust is brown.
