CHEESE OMELET 
3 eggs
3 tsp. mild grated cheese
1/8 tsp. pepper
2 tbsp. butter
Pinch salt
3 tbsp. water or milk

Beat lightly eggs (yolks and whites together). Add water and seasoning. Melt butter in pan. Pour eggs and stir lightly until mixture sets. Sprinkle grated cheese over top. Cook 1 minute. Turn in pan by slipping knife under omelet or hold pan over low flame; turn onto hot dish and serve at once. (You can use milk instead of water to make it richer).
