TREMAYNE'S SPICY CHORICO AND
HABANERO PASTA
 
This recipe is great for cold days or just when you want to impress someone with great food in little time, but take note that due to the large amount of Habanero's it's best enjoyed by people who appreciate spicy food.

1 tbsp. olive oil
1 to 3 Habanero peppers
1 onion, chopped
2 cloves crushed garlic
1/2-inch piece of ginger, juiced
few leaves of basil (optional)
3 tomatoes, liquidized
1/2 lb. Chorico, sliced
1 (16 oz.) pkg. pasta (of your choice)
1/2 tsp. thyme
1/2 tsp. parsley
1/4 tsp. sage
1/4 tsp. cumin
1/2 tsp. sugar
freshly ground salt and pepper

Firstly dice the Habanero's and onion and get the onions frying on medium heat with a tablespoon of olive oil. Add Habanero's after onions become translucent along with garlic and ginger. Fry on a low heat being careful not to burn.

In the meantime, prepare the pasta as directed by package but make sure that it is only 90% cooked or it will become a mess later on!

Now that the garlic is getting slightly gold add the Chorico sausages and basil leaves (if desired). Once the beautiful aroma of the Chorico comes out add cumin at this point. Fry for 3 minutes.

Next add the rest of the spices, sugar and a twist of salt and mix in equally. Then fry this combination on medium heat for 5 minutes. Now add your tomatoes and let sizzle away till onion gets cooked.

Now the main part, add the already strained pasta to the pot with the other ingredients and let everything cook together till the liquid has boiled down to just more than a paste and you are left with a beautiful full flavored pasta!
