POTATO SALAD DRESSING 
1/3 c. vinegar
2/3 c. sugar
2 heaping tbsp. flour
1 c. water
1 tsp. salt
2 egg yolks
2 c. mayonnaise (Hellmann's preferred. Do not use salad dressing.)

Combine vinegar, sugar, flour, water and salt. Mix thoroughly. Add beaten egg yolks. Cook over low heat, stirring constantly until thickened. Add mayonnaise after cooling. Whip together until well blended. Pour over combination of potatoes cooked with skins on, which have been removed; celery and onions, both chopped fine. Garnish with Hungarian paprika. Chill, preferably overnight.

Hi Kate,

Depending upon what else is being served, if you figure about 1/2 lb per person, which is a large serving, then you'll need 25 lbs (oversimplified).
