FUNNEL CAKE 
1 egg, beaten
3/4 c. milk
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/8 tsp. cinnamon
Oil
Powdered sugar

Combine egg and milk. Add flour, baking powder, salt, and cinnamon. Beat until smooth. Heat oil in an electric skillet to 360 degrees.

Use a funnel with small exit opening. Holding your finger over the funnel opening, pour 1/4 cup batter into the top. Let the batter run through the funnel onto the oil, moving in a spiral shape from the outside to the center. Fry for about 1 minute on each side, until golden brown. Drain on paper towels. Sprinkle with powdered sugar. Repeat until all of the batter is gone.

Try to give your cakes a lacy appearance. Do not make them thick. Be sure you scoop all of the little pieces of loose cake out between each batch, or they will give the oil an cakes a burned flavor. You can sprinkle them with powdered sugar also.
