PUMPKIN-APPLE STREUSEL MUFFINS 
2 1/2 c. flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, slightly beaten
1 c. solid pack pumpkin
1/2 c. vegetable oil
2 c. finely chopped peeled apples

STREUSEL:

2 tbsp. flour
3/4 c. sugar
1/2 tsp. cinnamon
4 tsp. butter

In large bowl combine first 5 ingredients; set aside. In medium bowl combine eggs, pumpkin and oil. Add liquid ingredients to dry ingredients. Stir just until moistened. Stir in apples. Spoon batter into greased or paper-lined muffin cups, filling 3/4 full.

In a separate bowl combine flour, sugar, and cinnamon; cut butter into mixture until crumbly. Sprinkle topping over batter. Bake at 350 degrees for 35-40 minutes. Makes 18 muffins.
