PUMPKIN APPLE STREUSEL MUFFINS 
2 1/2 c. flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, beaten
1 c. solid pack pumpkin
1/2 c. vegetable oil
2 c. finely chopped apples

STREUSEL TOPPING:

2 tbsp. flour
1/4 c. sugar
1/2 tsp. cinnamon
4 tsp. butter

In a large bowl combine flour, sugar, pumpkin spice, baking soda and salt. Set aside. In a medium bowl combine eggs, pumpkin and oil. Add liquid ingredients to dry. Stir until moistened. Stir in apples.

Spoon batter into greased muffin cups, filling 3/4 cup full. Sprinkle Streusel Topping over topping. Bake at 350 degrees for 35 to 40 minutes 10 to 12 minutes for mini-muffins.

Streusel Topping: Mix dry ingredients together. Cut in 4 teaspoons butter until mix is crumbly.
